Pesto is so versatile! In warm weather, use pesto on cold pasta favorites, such as fusilli, gemelli, or elbow noodles. Add chopped tomatoes and serve on a bed of lettuce. In cooler weather, serve pesto on hot pasta, such as capellini, spaghetti or linguine. Or, use it any time on sandwiches, pizza, salads or crackers. If there’s any basic recipe to have on hand, it’s this one–kids and adults love it and I routinely cook chicken or pork cutlets for dinner. Sometimes I make homemade chicken nuggets using the same recipe.

I have been making this recipe for over 20 years! (I was a child prodigy, heh heh!) In all seriousness, I have tweaked this recipe so many times, I can claim it as mine!
The original called for all-purpose white flour. I tried substituting whole wheat flour but it made the pancakes dense.

Three recipes, three completely different results.
For years, I’ve wanted to make my own mayo. We use a lot of it, and I am tired of waiting for sales on Hellmann’s! Plus, I wanted to know what was actually IN my mayo.
I must have looked at two dozen homemade mayo recipes and they are all different with comments that didn’t look very encouraging.
