Thanks to my friend, Maria, I saved myself time and aggravation. I have been meaning to roast and freeze my abundance of cherry tomatoes, but just haven’t had the time. Low and behold, you can skip the roasting part and preserve your tomatoes this way: just cut the tomatoes in half, arrange them on a baking sheet, and put them in the freezer for a couple of hours or overnight. Once frozen, take them off the trays with a spatula and place into a freezer bag.


In the winter, take out as many as you want to add to the end of your cooking. I’ll let you know how I do then.
